Sweet and spicy chicken fingers(Amount needed per person)
Hoisin Sauce. 8ml
Chicken Breast. 140g
Smoked Paprika. Add as taste
Chilli Flakes. Add to taste
Coconut Oil. 1tbsp
Spring Onions. 10g
Preheat the oven to Gas mark 5
Gently fry the garlic in the coconut oil.
Meanwhile mash the raspberries into a paste and add the honey and hoisin sauce.
Add this mixture to the garlic and gently simmer for around 5mins to thicken the sauce.
Slice the chicken breast into strips and place in the sauce so it covers the chicken.
Lay the chicken strips on a foil covered baking tray, sprinkle with the paprika and chilli flakes and place in the oven for 15mins.
Once cooked pour the remaining sauce on top of the chicken and add the spring onions.
I served this with noodles that were fried with garlic, ginger, lime juice and pepper.
